Olive oilfor sauteing
Instructions
Brown beef and drain. Saute onion, carrots and celery until tender. Add chicken broth, potatoes and basil. Cover and simmer until potatoes are tender.
Melt butter in microwaveable dish. Stir flour into melted butter. Add to pot, stirring gently until broth is thickened. Add beef, milk and cheese. Stir until cheese is melted and soup is bubbly. Remove from heat and stir in sour cream.
